Upside Down Plum Cake
Ingredients
250g flour
1 tsp baking powder
100ml vegetable oil
100g Nush natural almond yog
2 tbsp flaxseed + 4 tbsp water (combined)
200g sugar
Vanilla extract
1/2 tsp salt
Dash of plant drink
4 plums
60g sugar
35g dairy free butter
Dash of water
Method
Stir together all the dry ingredients. Add in the Nush natural almond yog, oil and flaxseed mixture, mix well (add a dash of plant drink if the batter is too thick)
Cut the plums in half and remove the stones. Place cut side down in a large cake in lined with parchment on the bottom
Melt the sugar and butter in a saucepan, stirring to combine. Once melted, add a small dash of water. Then turn the heat up and cook for around 2 mins until frothy. Immediately pour over the plums
Pour the cake batter over the plums and caramel, then bake at 180C for around 45 mins
Allow the cake to cool before removing from the tin and slicing
