Soft Shell Tofu Tacos

Ingredients

2 tbsp oil

1 clove garlic, sliced

1 block firm tofu (280g)

3 tbsp soy sauce

2 tbsp BBQ sauce

1 tbsp sriracha

Salt and pepper

4 tbsp Nush yog

1 tbsp harissa

Juice of 1/4 of a lime

Salt and pepper

To Serve

Guacamole

Lime wedges

Coriander

Chopped spring onions

Method

Add your oil to a saucepan on medium heat, then add your chopped garlic cloves, frying until golden and fragrant. Grate your tofu, then add to the pan and fry for about 5 minutes on medium heat, until golden brown, and some parts have started to crisp up

Add your sauces & season with salt and pepper. Fry for another minute or 2 until the sauces have started to caramelise, then remove from the heat.  Preheat your oven to 180°C

Add 4 taco shells to a baking tray, then fill each with 1/4 of the tofu filling. Fold the tacos over to close, then brush with oil and bake for 15 minutes

Carefully flip the tacos after 15 minutes, brush with oil on the other side, then bake for a further 10 minutes.  Whilst the tacos cook, mix your yoghurt ingredients together & prep the toppings

Plate your tacos up, drizzle with tequila yoghurt & serve with guacamole, spring onions, coriander & lime
