Focaccia Sandwich

Ingredients

Homemade focaccia

1 courgette

1 aubergine

1 red bell pepper

Oil

Salt

Garlic powder (plus any other seasonings)

Nush chive almond spread

Method

Slice up your courgette, aubergine and pepper into thin, flat slices. Arrange the veg on a lined

baking tray. In a small bowl/cup, stir together some oil, salt and garlic powder (plus any other seasonings you’d like). Spread this over each piece of veg, and roast at 200C for 20-25 mins

Cut a generous slice of focaccia and spread some Nush chive spread in the middle. Arrange the roasted veg on top and enjoy your sando!
