Blueberry Protein Pancakes

Ingredients

40g rolled oats

100g Nush Protein blueberry yog

30g vegan vanilla protein powder

40ml almond drink

1/4 tsp baking powder

1/4 tsp bicarbonate of soda

1 tsp apple cider vinegar

To Serve:
50g Nush Protein blueberry yog

Small handful of blueberries

1/4 banana, sliced

1 tbsp maple syrup

Method

Add all the pancake ingredients to a blender and blitz until smooth.

Place a frying pan over medium heat and add a little oil. Once hot, add a heaped tablespoon of batter to the pan. Fry for 2 minutes until bubbles start to form, then flip and cook for a further 2 minutes. Repeat with the remaining batter.

Stack the pancakes and serve with extra Nush Protein yog, blueberries, sliced banana, and a drizzle of maple syrup.
