
Vegan Blueberry Banana Bread
Ingredients
2 ripe bananas
1/2 cup blueberry almond yog
1 tbsp maple syrup
1 cup self raising wholemeal flour
1/2 cup almond flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
1/3 cup blueberries

Method
Preheat your oven to 180°C
Mash your ripe bananas up in a bowl.
Mix through the yog, then add the flours, a pinch of salt, the raising agents and syrup.
Mix everything well and then bake at 180°C for 45 mins, or just over, until spongey when touched.
Leave to cool, then top with blueberry yog and fresh blueberries.
Store in the fridge for up to 5 days.
