The Harissa tofu scramble

The Tofu Scramble
1/2 block silken tofu

1 tbsp rose harissa paste

1 tbsp balsamic vinegar

Juice 1/4 lemon



Sprinkle of each:
Ground Turmeric

Ground cumin

Ground coriander

Garlic powder

The Rest
1 bagel

2 tbsp chive almond spread

6-8 marinated artichokes

Crispy fried onions


Mix your harissa with the balsamic, lemon juice and spices

Add the harissa to a frying pan on medium – low heat and fry for 30 seconds to 1 minute.

Crush the silken tofu between your hands to break it into the pan and add a splash of plant drink of choice and stir

Leave on medium heat, frying for 3-4 mins whilst you toast your bagel

Spread cream cheese over your bagel, top with the harissa scramble, some drained, marinated artichoke hearts, crispy fried onions, and fresh herbs
