Strawberry And Banana Breakfast Loaf


Serves 8


200g of oat flour

½ cup of Muesli (we used Deliciously Ella’s Bircher Muesli)

1 tsp of gluten-free bicarbonate of soda

Pinch of sea salt

100 ml almond

2 tbsp of flaxseed with 4tbsp of water mixed

2 tbsp of melted coconut oil

75 g coconut sugar

2 very ripe bananas mashed

100g Nush Strawberry Almond Yog

100g of fresh strawberries

50g macadamia nuts chopped


Preheat oven to 180 degrees and grease a loaf tin with a touch of coconut oil.

In a large bowl add the almond, melted coconut oil, flaxseed mix and stir well, add the banana and put to the side.

In a second bowl, mix the oat flour, muesli, bicarb, sea salt and coconut sugar, stir before adding the wet ingredients and mix until well combined.

Add the fresh strawberries and macadamia nuts, both chopped into small pieces.

Pour into your lined loaf tin and bake for 45 minutes to an hour until a knife comes out clean.

Serve with fresh berries and more Nush Strawberry Almond Yog.
