Strawberry And Banana Breakfast Loaf

Makes one loaf

Time – 15 minutes prep – 1hr cooking time


Preheat oven to 180 degrees and grease a loaf tin with a touch of coconut oil

In a large bowl add the almond milk, melted coconut oil, flaxseed mix and stir well, add the banana and put to the side

In a second bowl mix the oat flour, muesli, bicarb, sea salt and coconut sugar, stir before adding the wet ingredients and mix until well combined

Add the fresh strawberries and macadamia nuts, both chopped into small pieces

Pour into your lined loaf tin and bake for 45 minutes to an hour until a knife comes out clean

Serve with fresh berries and more strawberry Nush


200 g of oat flour

½ cup of Muesli (we used Deliciously Ella Bircher Muesli )

1 tsp of gluten free bicarbonate of soda

Pinch of sea salt

100 ml almond milk

2 tbsp of flaxseed with 4tbsp of water mixed

2 tbsp of melted coconut oil

75 g coconut sugar

2 very ripe bananas mashed

100 g strawberry almond (or cashew) Nush yog

100 g of fresh strawberries

50 g macadamia nuts chopped
