Salted Caramel Banana Bread Cake Pops
Makes: 6
Ingredients
1 banana, mashed
1 scoop @myvegan salted caramel vegan protein powder
150ml soy milk
1/2 cup oat flour
1/2 cup almond flour
1 tsp baking powder
1/4 tsp bicarbonate of soda
1 tbsp natural almond spread
50g plant-based chocolate – to drizzle over the top
Method
Mash your banana in a medium, microwave-safe bowl until there are no lumps
Add your vegan protein powder and soy milk and stir well until there are no lumps
Add your flours, baking powder, bicarb and a pinch of salt and stir everything well
Put the mixture into a microwave safe bowl, spread out the top so it’s even, then microwave for 3 minutes at 600W
Remove from the microwave, leave to cool for 5-10 minutes, then break the mixture apart with forks until it resembles breadcrumbs
Add 1 tbsp almond spread and mix through well – you may need to use your hands for this, you don’t want any lumps
Roll into 6 balls
Top with drizzles of melted chocolate and a pinch of salt
