Raw Carrot Cake Squares
Ingredients
10 Dates (the stickier the better)
1/2 cup almonds
1/2 cup walnuts
1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tbsp melted coconut oil
1 large grated carrot
1 tbsp desiccated coconut
For the Frosting
1 tub 150g Natural Cheese Spread
1 Squeeze of lemon
1 tbsp maple syrup
Makes 8 Squares
Dates and nuts are two snacks that we ALWAYS have to hand, luckily, they are the perfect base for delicious energy balls and bars. We’ve decided to jazz this up and took inspiration from everyone’s all-time favourite bake…CARROT CAKE! Great to make with little ones to keep their hands busy and tummies happy.
Method
In a food processor, blitz the dates, nuts and coconut until the mix comes together, tip into a bowl and add the coconut, coconut oil, crated carrot, spices and mix well
Either roll into balls, or like us press into a small brownie tin and refrigerate until firm
Once set, mix together the frosting and spread over the base, chill again for 30 minutes before cutting and enjoying
