Raspberry Doughnut
Ingredients
The Doughnut
1 tbsp smooth almond butter
2 tbsp sugar
1 tbsp natural almond yog
1 tsp vanilla essence
Splash of chocolate almond drink
3 tbsp self-raising flour
1 tsp cacao powder
1/2 tsp baking powder
1/6th tsp bicarbonate of soda
Pinch of salt
1 tbsp maple syrup
To Top
2 tbsp raspberry almond yog
Mini rose petals
Freeze-dried raspberries
Method
Preheat the oven to 170°C
Mix the nut butter and sugar together, then add the yog and vanilla and stir well
Add a splash of milk, mix, then sift in the flour, cocoa powder, raising agents and salt
Stir to combine, then add the syrup when a paste starts to form
Grease a mini donut mould
Pour the batter into the mould and spread evenly
Bake for 12 minutes, then remove
Microwave for 30 seconds
Leave to cool for 10-15 mins
Top with the raspberry yog, rose petals and freeze-dried raspberries
