
PB & J Smash Overnight Oats
Ingredients
1/2 cup of oats
1 cup of plant drink
2 tbsp vegan vanilla protein powder of choice
2 tbsp strawberry or raspberry almond yog
1 tsp raspberry or strawberry jam
1 tbsp peanut butter
1 tbsp coconut oil
Method
To a microwave safe bowl, add your oats and liquid, then microwave at 600W for 2-3 minutes, or until desired consistency.
Set aside to thicken, and when cooled slightly, stir through your vanilla protein powder.
Add mixture to a glass or mug.
Add 2 tbsp raspberry or strawberry almond yog to the centre of your oats, then add 1 tsp jam to the centre of that.
Melt your peanut butter and coconut oil/ cocoa butter in a small bowl (about 2 mins in the microwave, but stir often to ensure it doesn’t burn).
Pour the peanut butter mix evenly over the surface, then refrigerate overnight.
Top with a pinch of sea salt and serve.
