Lime Cheesecake Bars


110g oat flour

3 tbsp maple syrup

30g almond butter

2 x 150g pots Nush natural almond spread

80g Nush natural almond yog

2 tbsp melted coconut oil

15g vegan vanilla protein powder

40g caster sugar

1 tsp agar agar

Juice of half a lime

Zest of half a lime

Lime slices (to decorate)


Stir together the oat flour, maple syrup and almond butter in a bowl until fully combined.

Press this into a loose bottom tin (mine is 15cm x 15cm)

Add all the cheesecake ingredients to a large bowl. Use a handheld whisk to mix everything together thoroughly. Once the mixture is light and fluffy. Spread this over the base and refrigerate overnight.

Place some lime slices on top of the cheesecake and cut into bars.
