Forrero Rocher Cookies and Cream Parfait
Ingredients
The yog layer
5 tbsp natural almond yog
1 tbsp hazelnut butter
1 tbsp maple syrup
The cookie layer
1 tbsp vegan chocolate protein powder
1 tbsp hazelnut butter
1 tsp maple syrup
A sprinkle of salt
The chocolate layer
4 pieces dark chocolate
5 hazelnuts, chopped
Method
Mix all the cookie ingredients together until you have a ball of cookie dough
Press onto a plate and microwave for 1 minute at 1000W
Leave it to cool for a couple of mins, meanwhile mix the yog ingredients together until smooth and adjust to taste (depending on how sweet you like it)
Transfer the yog to what you’re serving it in, top with the cookie and set aside
Melt your chocolate as you wish, chop up the hazelnuts and mix them through the melted chocolate
Top the cookie with the chocolate, add a final layer of hazelnuts and leave in the fridge for at least thirty minutes but preferably overnight before eating.
