Curried Butterbean and Pea Lettuce Cups

Method

Preheat a pan with 1tsp coconut oil

Slowly cook the onion until soft on a low heat

Add the butter beans and frozen peas and cook for another two minutes

Add the spices, almond yog and stir well

Serve in lettuce leaves and enjoy

Ingredients

½ Onion sliced

1tsp coconut oil

1 tin of butter beans

100g peas

1tbsp milk curry powder

1tbsp natural almond yog

8 lettuce leaves
