Protein Blondies

VEGAN – DAIRY-FREE

Ingredients

250g spelt flour

100g vanilla vegan protein powder

1tsp vanilla essence

1tsp baking powder

200ml almond m.lk

50g maple syrup

200g Nush Natural Almond M.lk Yog

2tbsp of strawberry jam

1 x mini pack of Jammie Dodger biscuits (optional)

Method

Preheat the oven to 180 degrees and line a brownie tin with coconut oil and baking paper.

Combine the dry ingredients and mix well until combined.

Add the wet ingredients and stir until batter is created.

Pour into a lined tin and top with swirls of jam and biscuits.

Cook for 30 minutes until cooked, slice and serve.
