Curried Butter Bean and Pea Lettuce Cups

VEGAN – DAIRY-FREE – GLUTEN-FREE

Ingredients

½ onion sliced

1tsp coconut oil

1 tin of butter beans

100g peas

1tbsp curry powder

1tbsp Nush Natural Almond M.lk Yog

8 lettuce leaves

Method

Preheat a pan with 1tsp coconut oil. Slowly cook the onion until soft on a low heat.

Add the butter beans and frozen peas and cook for another two minutes.

Add the spices, Nush Natural Almond M.lk Yog and stir well!

Serve in lettuce leaves and enjoy.
